Great recipe, Sophie! I've taken to using little dollops of quark between the layers of pasta instead of bechamel. They stay deliciously creamy and are almost fat-free. This lets me use a decent amount of Parmesan on top for melting purposes and you still have a low-fat but very decadent lasagna once baked.

Wonderful entry for Heart of the Matter.
When you pack it with veggies (like the fennel) and keep the cheese down, it will work as heart healthy. Yours looks good!

Eliza - I tried making lasagne in a round bottomed bowl a little while back but it just didn't seem right. Somebody got far more than their fair share of crunchy topping because of the sloping sides :-)
Ilva - thanks for organising again!
Freya - lasagne definitely needs that lovely cheesy bit! I hate those super low-fat lasagnes with no cheese in them - I think it's definitely better to have proper cheesey lasagne occasionally than to have one of those horrible soggy things every week!

Lovely combination of fennel and tomato. I agree, the best bit of a lasagne is the cheesy top!

hi Sophie,
I don't think you need to own a lasagna dish to make lasagna. any kind will do & you can even do a roll-up style lasagna :)
i have to agree with others, homemade lasagna always taste better and healthier for us. yours look very appetizing and healthy already!
